“This new version of Majga, unfiltered and without added sulfites, is a wine that defies time. It’s a new project for our family, starting from the vineyard. A more sustainable way of viewing wine. If we were to summarize it in two words, we would say: pressed and fermented grapes, without any clarification or filtration process. The winemaking process involves a selection of grapes both in the vineyard and in the cellar. There’s a soft direct pressing of the clusters, selection of the must, and fermentation with low-sulfur dioxide-producing selected yeasts followed by malolactic fermentation. A short aging in steel tanks continues, in contact with the yeasts, with repeated batonnage three times a day throughout the refinement. It’s a wine that delivers an emotion with every sip.”
